    Default Bacon Cheese Frittata

    I love eggs and bacon, and I especially love frittata, as in my opinion, it can be eaten any time, never mind just in the morning.


    Bacon Cheese Frittata


    Ingredients


    • 6 eggs
    • 1 cup milk
    • 2 tablespoons butter or margarine, melted
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • 1/4 cup chopped green onions
    • 5 bacon strips, cooked and crumbled
    • 1 cup shredded Cheddar cheese *


    Directions


    • In a bowl, beat eggs, milk, butter, salt and pepper. Pour into a greased 11-in. x 7-in. x 2-in. baking dish. Sprinkle with onions, bacon and cheese. Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean.



    * I always use old, crumbly cheddar.

    Default Basic Quiche

    "Real men don't eat quiche." But I do!

    Basic Quiche


    Ingredients


    • 4 eggs
    • 2 cups half-and-half cream
    • 1/8 teaspoon salt
    • 1/4 teaspoon white pepper
    • 1/8 teaspoon ground nutmeg
    • 4 ounces Jarlsberg cheese, shredded
    • 2 ounces mozzarella cheese, shredded
    • 1 (9 inch) unbaked pie shell


    Directions


    • Preheat oven to 425 degrees F (220 degrees C).
    • In a large bowl, whisk together eggs and half-and-half. Season with salt, white pepper and nutmeg. Place shredded Jarlsberg and mozzarella in the pie shell. Pour egg mixture over cheese.
    • Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake for 25 minutes, or until crust is golden and filling is set. Allow to set 5 to 10 minutes before serving.

    Mr. Pip put his nose up at this recipe until he took a taste of it; lucky there was enough left for me, I tell you, it's that good!

    Those seem a bit fattening. Just 2 CUPS of half and half scares me! Of course, they also sound good.

    I love anything fritatta or quiche-ish. The two most popular quiche at my shop were proscuitto, roasted asparagus and gruyere cheese and second was roasted veggie. So much flavor and soooooo freaking easy to make!
