    Default Tortilla Soup

    After reading about gazpaucho and starting to have some serious Jonesing going on for Tortilla Soup I went looking for recipes for the soup they serve at my favorite Mexican restaurant to no avail. None of the recipes was close so I ended up making up a crock pot of it from my best guesstimate and it was wonderful..

    3 whole chicken breasts
    6 half ears of corn on the cob
    1 1/2 quarts chicken or vegetable broth
    2 onions chopped
    1 green bell pepper chopped
    1 red pepper chopped
    1 zuchinni chopped into slices
    1 carrot chopped into slices
    1 crushed clove of garlic
    2 stalks of celery slices
    3 whole tomatoes chopped up
    1 tsp chili powder
    1/2 cumin
    assorted herbs, salt and pepper to tase
    2 tortillas cut into strips
    1/2 cup shredded cheddar cheese.

    Combine all the ingredients except the tortilla strips and cheese into a crock pot and cook on medium for 4 hours. Serve with a sprinkling of tortilla strips and cheese on top.

    this sounds really good..now make me some and send it to me..I will get my own cheese and chips..and I will then send you the money for it..no really I will...REALLY!

    I have a recipe for tortilla soup somewhere. I'll try to find it. All I remember is that it calls for lots of lime and most of the stuff you put it, Gator. And I believe it called for white cheese of some sort.

    Queso fresco is better on it-to be sprinkled. It is like a Mexican feta-milder but same texture. Get it if you can. I crave it! It is good on refried beans and chalupas too!
