    Default Southwest layered salad - for all the vegetarians on the board

    I saw this in a magazine and thought about you non meat eaters!

    6 cups torn romaine lettuce
    1 15oz can black beans drained
    1 cup frozen corn, thawed
    3/4 cup salsa
    1/2 cup mexican style shredded cheese
    1/4 cup ranch dressing
    1 cup tortilla chips

    Arrange lettuce in bottom of a bowl/plate. Layer beans, corn, salsa & cheese evenly over top.
    Drizzle with dressing, sprinkle with chips.

    Sounds yummy! Let me know if anyone tries it out!

    mmm sounds like something I'd make for sure. Sans the cheese - damn being lactose intolerant.

    Mmmmm. This sounds so yummy. I would probably add some red bell pepper to it and use fresh salsa not that stuff from a jar.

    I didn't realise offering ideas and adaptations was "quibbling" dakodas. It's what most people do you know...

    Read Chuckpony's post again. This sound yummy, I would probably add. It was an addition, not a qualification, and most people do simply say "it's delicious" and that they'll try it.
