    Default Lentil and Sweet Potato Rissoles

    Yet another one of my 'god I am so bored of this food, what can I do?' things.


    (makes 8)

    400 g tin of Lentils
    1 1/2 cup of mashed sweet potato
    1 small diced onion
    1small green diced capsicum
    1 grated carrot
    2 teaspoons parsley
    1 teaspoon ground chilli
    1 cup wholemeal bread crumbs/polenta

    Combine lentils and vegies in bowl, use hands to blend in sweetpotato, breadcrumbs and cumin. if dry add some water/unsweetened tomato sauce/home made salsa. Make into 8 balls and refridgerate for at least 30 minutes. Spray with a light oil and bake in preheated (200C/400f) oven, turning once or twice, for 35 minute or untill crisp and golden.

    Serve as a burger or broken up with a green salad.

    Lani what is capsicum? I have never heard of it, but the recipe sounds great I will try it after I find out what capsicum is.

    I guess in some parts of the world they call it gred/green pepper? its like a big so not hot chilli I guess.
