Enchiladas -- Please post recipe
Ralphycan, you posted a great, not-too-hard receipe for enchiladas on the last board. I'd love it if you re-posted it. I have a friend who loves enchiladas coming for dinner Friday and I'd like to make it for her.

i posted a recipe for chicken enchiladas with sour cream and green enchilada sauce.
this might not be it but i wil post it just in case
chicken- i use breasts but i suppose you cold thighs if that is your fav part of the chicken, about a pound
poach in water, add lots of salt and pepper, a few cloves or garlic is nice too
once chicken is cooked, shreed with your fingers, add a cup or so of sour cream, somr jack cheese, green chili (roasted from the can), a bit of chopped onion
fry up the tortills, this should make about 12 but can be more or less depending on how full you make the enchiladas
get the medium green enchilada sauce, green works really well with the sour cream and the chicken
fill tortillas and put in dish (put some sauce on bottom of pan so enchiladas dont stick), cover with more sauce and cheese on top (we use jack and cheddar)
bakr in oven at 375-400 for about 20 mins til bubling, but start checking after 15 just to be safe

i make the same recipe, and it really is so good. one thing i add that isn't mentioned above is that i mix the sour cream with one undiluted can of cream of chicken soup. bear in mind this adds a ton of calories, but it makes the sauce thicker and adds a little more flavor. just an option.

Anyone have any good enchilada or burrito recipes?
I am looking for something with beef (preferably not ground beef, maybe steak) and refried beans, but will consider chicken? Thanks

I like making my enchiladas with chicken or ground beef. Everyone loves my ground beef one. I make it with Broccoli and cheddar cheese. Once the ground beef is browned I add a diced tomatoes and onions, salt to taste, add a little bit of water. After the tomatoes are soft I add the chopped broccoli and let it cook for a little while. After that I just wrap the enchiladas with big corn tortillas, pour the enchilada sauce over, top with more cheddar cheese and I put it in the oven. Yes, I love cheese.
