1 c. sugar
1/2 c. shortening ( I use those butter flavor Crisco sticks)
2 eggs
2 c. flour
1/2 c. chopped walnuts
1 t. baking soda
3 soft, ripe bananas
I use my Kitchen Aid mixer so I can just throw all that stuff in there, so easy.
Cream sugar and shortening, add eggs, flour, baking soda, bananas and chopped walnuts.
Pour batter into a greased and floured loaf pan.
Bake @ 325 for about 1 hour and 15 minutes or until a toothpick inserted comes out clean.
This will make one large loaf of banana bread.
I like to make the mini loaves. It makes about 3 of those.
Or sometimes I will just make banana muffins out of this and use the little cupcake paper things and then I don't even bother with the whole greasing and flouring thing.
