    Default Easy Lowfat Spinach Souffle

    I love, love, love spinach souffle but I don't love the fat and calories. In my quest to eat well, feel better and lose weight I've been trying to find recipes that incorporate my favorites and meet those standards. Here's one.

    1 box frozen chopped spinach thawed and drained
    1/3 cup skim milk
    1 beaten egg
    1/3 cup low fat cheese
    1 chopped clove garlic or garlic powder to taste
    salt and pepper to taste

    Put drained spinach in an oven proof small casserole dish. Mix all other ingredients together and pour over spinach. Microwave on high covered with plastic wrap for 3 minutes. Remove plastic wrap and microwave another 3 minutes on high. Serves 5.

    I've been really into spinach lately. This sounds so simple and tasty. Do you squeeze the excess liquid from the spinach, or just drain it?

    Kind of a combination of both. I let it drain awhile and then give it a quick squeeze.

    do you think it'd work in a standard oven? i have a microwave but i use it as little as possible. (my mother tells me this is insane but something really sketches me out about the microwave)

    Yes, you can also bake it in a standard oven for about 20 minutes at 350. I'm just the impatient one nuking whenever possible.

    ah yum! I think i'd add mushrooms to it somehow just to make it one of thoes complete vegetarian dishes. So going to try this one out.

    Mmmmmm, just made this for lunch!!! I have to say, it's very tasty! I thought that the milk, cheese and egg mixture was not going to be enough for all that spinach, but it was really quite perfect. I may add some onion next time.

    But....5 servings??? Uhhhhh....I ate it all in one sitting!!!

    I usually eat it in one or two servings too but the place I got the recipe said 5 servings. I guess that's for the people who only eat spinach for health reasons and don't like it.

    ^^^true, probably not everyone loves spinach like I do. My husband sure doesn't.

    Well, I do have to say that when I ate it all in one sitting yesterday I wound up with a tummy ache!!! So I guess it should be two servings.
