I found this quite tasty, it reminded me of stuffing. You could experiment with any number of spices and veggies to get different flavors.
Vegetable Cheese Oat Dish
Preheat oven to 400F/205C.
Combine in large bowl:
1 cup cottage cheese
1 cup rolled oats
2 Tbsp soy sauce or tamari
1 Tbsp oregano
Heat in a skillet:
1 Tbsp vegetable oil (I didn't use oil, just sprayed the pan)
1 cup chopped onion, saute until golden.
1 cup chopped carrots (or any combination of veggies you want, I made mine with 1.5 cups total of mushrooms, carrots, and zucchini)
Saute for 2-3 minutes more.
Add vegetable mixture to bowl. Mix well. Spread into greased square baking pan.
Bake for 20 minutes.
