How do you make your Fajitas?
I'm not sure wether I should put it here or in the sub-forum, so feel free to move if I have done something wrong.
My question to you guys is: How do you make your fajitas?
I usually put meat, salsa, veggies (cucumber, tomato, corn), dressing, warm paprika and onion, rice and cheese on tortillas. It's a weird mix of different dishes I guess, but it tastes great!
But I want to try something new and I'm not sure what.

I grill marinated skirt steak. I serve with tortillas with grated cheese, guacamole and pico de gallo on the side. I let people build their own tacos. Usually I also make rice and beans but as side dishes not to go ON the meat tacos.

I'm with Reina...marinated skirt steak. I marinate mine in beer and old coffee.
I make my fajitas with CORN tortillas, or flour if they're nice and fresh and dusty, not those greasy discs that some places try to pass off as flour tortillas. I use pico, sour cream, and guac on my fajitas, though sometimes if I'm in a mood I'll use corn salsa instead of pico. I also fry onions and thin slices of pepper to go with my fajitas. I like 'em like that.

I marinate either beef or chicken in a mixture that includes lime, cumin and garlic.
I saute sliced green and red peppers and onions, remove them and then saute the meat. I serve the veggies and meat on a platter and serve chunky salsa, guacamole, cheese, sour cream and shredded lettuce to build the fajitas on warm tortillas.
I usually serve a corn and black bean salad on the side.

You've never had a fajita? You are missing something! You need to try them, but warning, if you order them at a restaurant, you will smell like grilled fajita-seasoned meat and veggies -- they usually bring it to you on a cast iron platter and they are very steamy, and you'll leave smelling fajitas all night.

ROFL, that's how people here pronounce it. They also pronounce 'jalapeno' as 'ja-LA-pe-no' instead of 'ha-la-PE-nyo.' When I ask for pizza with jalapenos on it, they usually don't understand what I'm asking for until I mutilate the pronunciation the way they do; then they're all 'OH, OK.'

Yeah. We're white, so we don't know how to make Mexican food properly.
