Default What's a good side dish to go with chicken and rice?

I have a date in a couple of days, and I want to make this shredded chicken in gravy that my mom taught me. However, I can't think of a good side dish. All I can think of is mixed vegies, but I want something a little more creative i guess.

Any suggestions you may have are greatly appreciated. Thanks!!

green beans. i cook mine with a little bit of bacon, some minced onion & garlic and then serve with red wine vinegar.

boiled asparagus brush it with a bit olive oil, kosher salt and coarse black pepper, even better if you can grill it

Peas french style. Fry a little diced bacon and onion and add to green peas cooked in chicken stock.
