Oven-baked potato chips

My mother used to make something like this -- yum!
Oven-baked potato chips
4 russet (baking) potatoes, peeled and sliced diagonally 1/8 inch thick
1/2 stick (1/4 cup) of butter, melted
coarse salt to taste
Pat the potatoes dry between paper towels and arrange them in one layer in 2 buttered cookie sheets pans. Brush the potatoes with the butter, bake them in a preheated 500°F oven for 15 to 20 minutes, or until the edges are golden brown. Sprinkle them with the salt.
Serves 4.

If you believe everything the 'experts' say you wouldn't dare eat anything, especially if it tastes good. Apparently there is some risk with 'burnt' food, ie blackened, but if it's that charred it tastes horrible and bitter so why would anyone choose to eat it anyway?

Well high heat causes the starches to form carcinogens, but I believe that's only at deep frying temperatures
But if it tastes good do it  Just eat some blueberries after

I can't believe you just wrote that. Whenever I eat anything "bad" or known to perhaps cause cancer, I always consider eating blueberries afterwards, ahhahahahahaa, they are a power food.
oh yeah and those chip look amazing I want to try them tonight!!

I love to make oven chips.
I especially love doing it with sweet potato - but they caramalise a lot quicker than normal potato. But they taste delicious.
I do it slightly differently. Par-boiling them first so they're fluffy inside, and then I put them on a baking tray with olive oil, some rosemary, and salt. And just leave them in the oven for 30/45 minutes, turning occasionally.
