Something else I had in Africa that I loved. I make a version of it here, it differs in the type of beef used and cheese. They have a spreadable cheese there that is similiar to cream cheese but more crumbly texture and the beef is usually slow roasted with herbs and thin sliced. I cheat and use Americanized versions of these things. This tastes great with the Mango salad and it's quick, easy and great on those hot days when you don't feel like heating up the kitchen.
1/2 pound thin sliced roast beef from deli
12 whole wheat or flour tortillas
8 ounces of cream cheese
1 red onion thinly sliced
tabasco to taste
curry powder and garlic powder
Lay the beef slices out on a cookie sheet and sprinkle them with curry and garlic powders before putting them under the broiler just long enough to get them hot. Lay out the tortillias and spead each one with a thin layer of cream cheese, a layer of onions and beef. Sprinkle on a small amount of Tabasco sauce to taste and roll up tortillas.
I usually cut these in half before serving. They keep well in the refrigerator for a few days and are great for picnics.
