    Default Chalet's Disco Inferno Mango Chicken

    So it's like, you get some chicken. I do love organic.

    In a shallow baking dish you place the chicken, rub it with cajun seasoning and a little coarse dijon mustard.

    Chop some roasted red peppers (from a jar) and sprinkle over chicken.

    Get two medium fresh mangos, cut into medium pieces and sprinkle over chicken. It's a very tasty and colorful dish. You can also use canned, unsweetened pineapple (no juice is needed).

    Bake at 350 for 50 minutes loosely covered with foil........then check the chicken to see if it needs more time.

    Oh, when you check on the chicken, be very careful of the juices spilling over the edge, so that you don't get a second degree burn on your wrist and arm, go to the emergency room and sit there with a dishtowel wrapped around it in a bath of water for 5 hours.

    Best part? The attending doctor was so handsome I couldn't stand it. Dummy me didn't have her glasses on
    and couldn't read the name on his badge. He probably wondered why I was squinting at what would be his nipples. I would have fixed him up with a couple of friends. Other best part was the percoset to sleep. Still got one left over

    hahaha funny recipe. sorry about the burn though.

    they don't sell cajun seasoning. any idea what's in it so i can re-create it from scratch?

    Essence, Emeril's (Cajun Seasoning) I (P, KLP, TNT)
    Source: Emeril Lagasse
    Yield: Approximately 2/3 cup
    2 tablespoons salt
    2 tablespoons garlic powder
    1 tablespoon black pepper
    1 tablespoon onion powder
    1 tablespoon cayenne pepper
    1 tablespoon dried leaf oregano
    1 tablespoon dried thyme

    Combine all ingredients thoroughly and store in an air-tight jar or container.
