Default Coffee Chicken

chicken breasts (or any part of the chicken you desire)
3/4 c. coffee + 1/4 c. coffee for reduction
1/3 c. ketchup (i used less)
3 T. soy sauce
2 T. lemon juice
2 T wine vinegar (didn't use)
1 T. olive oil (didn't use)
2 T brown sugar

Pour over chicken in shallow baking dish and bake at 350 degrees uncovered - about 15 minutes because i was only making 1 chicken breast but longer if you are making more. Reserve liquid.
Put remaining liquid and coffee in a small pot on the stove. Bring to a boil. Reduce heat and simmer 5-10 until reduction becomes thicker, taking on a sauce consistency.

Note: I completely did away with measurements and just "eyeballed" it. It tasted perfect.

oooh, I gotta try this!!! I often put coffee in the crock pot with my roasts and it seems to make it sooooo tender. I have all these ingredients on hand except the vinegar. I'm gonna try it tomorrow!

To be honest it sounds perfectly revolting but I am ALWAYS happy to try something before I judge so I will get back to you.

haha honestly it worked out well. i did not have high hopes for this but the chicken came out nice and tender and the sauce was a good consistency and it was generally good (which can not always be said for my experimentations).

It sounds perfectly weird BUT appealing. I'll try it!!! Maybe even make the "fake meat" (soy) version. And in the pan.

I never put chicken in my coffee before

Ok, I tried it tonight

... Tastes like chicken

Actually I was surprised at how little you notice the taste of coffee, if you don't know it's part of the ingredients, I'm not sure you'd guess it. I did not put sugar, the ketchup is sweet enough for me. But I'll have to add some chili next time, I'm sure that the hotter the better

yeah it was really the sauce that gave the coffee-y taste. i boiled it / simmered until it became reasonably thick and that brought on the coffee taste. and i bet it is better the hotter it is. i love spicy and hot foods.
