This is a really awesome recipe that my mom modified from a Southern Living recipe. I love it! Its a great summer dish. You can also half the recipe if you're only making it for yourself.
2 lb jumbo fresh shrimp (also works with frozen shrimp)
(or recipe will work with 3 lb)
2 large red bell peppers
2 large green peppers
1/2 large red onion
12 oz (about 1 and 1/2 bottles) Kraft Zesty Italian dressing
+ 1/4 cup light olive oil
+ 1/4 cup good balsamic vinegar
1/2 cup finely chopped fresh parsley
1 clove fresh garlic, pressed
Peel and clean shrimp; grill or saute and place in large bowl. Squeeze lemon juice over the shrimp. Cut peppers and onions into large pieces; grill or saute- you just want to soften up the veggies a bit, don't cook them until they are mushy. Then add to the shrimp in large bowl.
Now make the marinade:
Press or chop garlic and parsley. Add to salad dressing, olive oil and balsamic vinegar.
Pour the marinade over the shrimp and veggies, stir to mix and coat shrimp, cover & chill 8 hrs. or overnight.
The dish is awesome after marinating for even 3 hours, but 8 hours makes it better. I like to serve it cold, but its also awesome heated up.
