MMMM, this sounds really yummy, I love chocolate covered cherries!
Just in time for Valentine's Day. It takes about two weeks for the centers to liquify and set up properly when you made these but they are so delicious home made.
1 cup real butter at room temperature
1 pound powdered sugar
1 8 ounce jar of marischino cherries with the stems on drained
1 pound melted chocolate of your choice
Using your mixer beat together the butter and sugar until you have a yellow paste. Make small balls slightly larger than the size of the cherries and wrap the sugar butter mixture around the cherry in a thin layer. After you've wrapped your cherries carefully dip them by the stem one by one into the melted chocolate. After the chocolate hardens put them into a wax paper lined tin box or plastic storage container for 2 weeks so the sugar/butter will turn into a liquid center. Enjoy.

I might make this with real cherries next summer. Maraschino cherries make me sick, literally.
But I think real B.C. cherries with dark chocolate would be a yummy alternative for me.
Finally found another recipe. This is a good one to make in time for that dreaded word...Christmas.
Chocolate Dipped Cherries
* 2 cups of dark sour cherries with stems
* 3 cups of cherry schnapps
* 2 cups of fondant
* 2 cups of dark chocolate
Chocolate Dipped Cherries
1. Place the cherries in a sealed jar with the schnapps and marinate for three months.
2. Once the cherries are ready, drain them in a sieve overnight to make sure that all of the alcohol is removed from the surface of the cherries.
3. Place the fondant in a saucepan over medium heat and melt. Dip the 3/4 of the cherry in the fondant. Place the dipped cherries on a waxed tray.
4. Place the chocolate in a saucepan over medium heat and melt. You will be dipping the cherries in the chocolate mixture twice. The first time dip 3/4 of the cherry in the chocolate, set aside. The second time you dip the cherry, you will be dipping it in the chocolate mixture right up to the stem. Place the chocolate covered cherries on wax paper and let rest for 24 hours.
