    Some of my family are rednecks ... a lot of them eat parts of the head, albeit when the pig is on a pig roaster and the skin is still on. I won't disgust you with the story of my uncle, who almost turned me into a vegetarian on the spot.

    Another possible reason for skinning the pig's head could be that they are going to have it stuffed and mounted, which I think is utterly gross. I grew up in a family that hunts (so does DH). It's the culture around here. And I don't know anybody in my extended family or any friends that kill anything that they don't eat. I don't eat that shit though; the meat I eat has to come from the grocery store. I can't even touch raw meat without barfing (clinically diagnosed OCD).

    I know what you mean. My mother raises hogs and I've seen them in various forms of undress but I do not recall seeing any with their heads skinned. Are they skinned to make hoghead cheese? I can't recall. Even when they are roasted whole, they don't skin the damn heads...

    Yeah, having been to many pig roasts in my life (but not eating it; it makes me want to puke), I have never seen the head skinned during a pig roast. A lot of people actually like the skin of a roasted pig (again, barf), so it would make no sense to skin it if it was going to be roasted.

    My college roommate got married on her parents' farm and had a huge pig roast. It was my first "farm wedding" and I was disgusted to see that damn pig on a spit. Right before they moved everyone into the machine shed for the dance (no joke), they plopped that baby on a table (head and all!) and carved the flesh off while you were standing there with your plate in hand. I nearly threw up and managed to eat a lot of corn and potato salad that night instead.
