    If you like goat's cheese, you would probably like sheep's milk cheeses too. Ever had manchego? You can choose between mild, medium and sharper varieties, and it's amazing with quince paste.

    Speaking of goat cheese, have you had būcheron? Sometimes it's called just būche when it's a smaller size but it's essentially the same thing. It's possibly my favorite cheese ever, it's still soft but riper than most soft goat's cheese so it's got kick to it but consistency of a softer cheese.

    Do you like blue cheeses? Roquefort, Gorgonzola, Stilton, etc are all great. Stilton kind of tastes like cheddar and blue cheese had a delicious cheese baby.

    also, try goat Brie.
    Thanks for the suggestions. I will definitely start trying them. I have had the bucheron, and it's my favorite, too. Something about goat cheese, I dunno, it's creamy but it's got this awesome tang. I'll check out the manchego, too.

    I'm developing a taste for blue cheeses after overcoming the mental block.

    bucheron is heaven. when i lived in chile for 3 year, the only thing i truly hated about living there was the sad, sad cheese selection available. their national cheeses sucked balls and then they didn't import anything good either. every once in a while you could find imported, very average french cheeses sold at exorbitant prices, or the odd cheddar, but overall the cheese landscape was bleak as hell.
    anyway, my first trip to europe during my stint in chile, i stayed at my best friend's place, and went to the supermarket and bought a big fat slice of bucheron, and sat down and ate the whole thing with a fork. i didn't even bother with bread. and i eat the skin on it too, even though it's slightly astringent and leaves a weird taste on your tongue. it's one of my most vivid food memories.
    then i went mad with other cheeses too but i had to start with the buche to kick off the end of my cheese famine.

    Yes. And I tried some of their goat's cheese once and it was the blandest shit ever. They have about 4 types of cheese, that's it, and they all suck. I didn't taste a single decent Chilean cheese the whole time I was there. And their national cheese that they put on everything and that supermarkets carry 2 different brands of, is this sad shit called 'queso mantecoso', which literally means buttery cheese but which really should be called tasteless hunk of dairy fat.
    All their dairy sucks, really. You can't even find regular pasteurized milk, it's all nuked UHT stuff.

    Smoked cheeses are gross. Aged goudas with salty crystals make me swoon. Horseradish havarti is amazing with beef. Brie de meaux has been on my mind all day.

    Also, eating cheese makese crave charcuterie and other ploughman's lunch-style eats. I want salami and cornichons something fierce.

    I can always eat cornichon. Or any other kind of pickle.
    Cheese makes me want pickles of all kinds. I buy these sweet pickles - a mix of pickles, cauliflower, pearl onions and a few other things, paired with cheese it is obscenely good.
    Also, a friend taught me to make pickliz, which is a Haitian pickled cabbage and carrot thing that's spicy and tangy and tart and delicious. I can sit down with that stuff and triscuits and aged cheddar and eat until half the cheddar block is gone.

    Triscuits are awesome, as long as they don't rip open the roof of your mouth.
