"I know women are going to be upset with me, but I'm just not very good with all of that. I'm old!"

Oh just elope already or have a potluck supper with family and friends. No planning,no whining, no stress.

She just doesn't seem like a fun or happy person to me. And no, not because she doesn't want to have a wedding, she just always looks angry. I'll bet having a "party" for a wedding would give her a migraine.
