    We don't do Thanksgiving here in the colonies and I give thanks for that.

    What, pray, is this "green bean casserole" of which you all speak?

    Greenbean Casserole
    Ingredients:
    • 1 can (10 3/4 ounces) condensed cream of mushroom soup
    • 4 cups cooked green beans
    • 1/8 teaspoon pepper
    • 1/2 cup milk
    • 1 1/3 cups French fried onions
    Preparation:

    Mix soup, milk and pepper in a 1 1/2-quart casserole dish. Stir in beans and 2/3 cup of the fried onions. Bake for about 25 minutes at 350 degrees F. Top with the remaining 2/3 cup fried onions and bake about 5 more minutes, until onions are lightly browned.
    Serves 6.

    ^^ My mom makes that every year. Tastes like shit, but she still insists on making it. It's usually the last of the leftovers, too.

    My dog seems to enjoy it, though.

    I never liked it until I tried this Cook's Illustrated recipe. YUM YUM YUM

    Topping:

    4 slices white bread, torn into quarters
    2 Tblsp unsalted butter, softened
    tsp salt
    1/8 tsp ground black pepper
    3 c. canned fried onions (French’s)

    Beans and Sauce

    2 lbs. green beans, ends trimmed & halved
    3 Tblsp unsalted butter
    1 lb white button mushrooms, stems trimmed, wiped clean & broken into inch pieces
    3 med. garlic gloves, minced or pressed
    3 Tblsp all-purpose flour
    1 c. chicken broth
    1 c heavy cream

    1. For Topping: Pulse bread, butter, salt & pepper in food processor until mixture resembles coarse crumbs (about 10 1 sec. pulses). Transfer to large bowl & toss with onions; set aside.

    2. For Beans & Sauce: Adjust oven rack to middle position & heat oven to 425 deg. Fill large bowl with ice water. Bring 4 quarts water to boil in large Dutch oven. Add 2 Tblsp salt and beans. Cook until bright green and crisp-tender (about 6 min). Drain beans and plunge into ice water to stop cooking. Spread beans on paper towel lined baking sheet to drain.

    3. Add butter to now-empty Dutch oven and melt over med-high heat until foaming subsides. Add mushrooms, garlic 3/4 tsp. salt & 1/8 tsp pepper; cook until mushrooms release moisture and liquid evaporated (about 6 mins). Add flour and cook for 1 min, stirring constantly. Stir in broth and bring to simmer, stirring constantly. Add cream, reduce heat to med. and simmer until sauce is thickened and reduced to 3 cups (about 12 min). Season with salt & pepper to taste.

    4. Add green beans to sauce and stir until evenly coated. Arrange in even layer in 3-quart baking dish. Sprinkle with topping and bake until top is golden brown and sauce is bubbling around edges, about 15 mins.

    Actually, one thing I will fess up to is being a bit of a turkey nazi when it comes to how the remains are deboned. It drives me nuts to see a turkey thrown out with a shitload of meat still on it. But it's only because I'm thinking ahead of all the easy meals I can make for another week (or more if enough to freeze).

    ^^You and my mom both. She hates doing it but refuses to throw away even a tiny scrap of meat. She doesn't even like turkey, she just hates to waste food.

    I'm cooking Thanksgiving this year. Or having it at my house anyway, my mom and one of my sisters are flying out to California for it, so let's all cross our fingers I don't burn the kitchen down.

    Husband is smoking a 14-lb. turkey. (Let's hope he doesn't burn the rest of the house down from the outside.)
    Also wants to smoke some spare ribs.

    -gravy
    -cornbread stuffing
    -Green beans (I HATE greenbean casserole, refuse to serve it) and carrots
    -mashed potatoes
    -Hawaiian sweet rolls
    -pumpkin pie
    -plenty of wine

    There'll only be 5 of us so I think this abbreviated menu will be enough and I refuse to complicate my life any further!

    If I had my way I'd be smoking one too. But I'd only do it in an outdoor smoker.

    Yep, we got one of those. My husband's new hobby. He's gotten pretty good at smoking ribs so let's hope he does okay with a turkey. If not, it might be a turkey-less thanksgiving, ! Thank God nobody important or bitchy is attending ! Well, besides me...
