    Leftover baby back ribs (done in the smoker over the weekend), homemade mac and cheese, steamed green beans and red slaw.

    I'm making a tomato pie for dinner tonight. It's so damn good and easy.

    Ingredients

    4 tomatoes, peeled and sliced
    10 fresh basil leaves, chopped
    1/2 cup chopped green onion
    1 (9-inch) prebaked deep dish pie shell
    1 cup grated mozzarella
    1 cup grated cheddar
    1 cup mayonnaise
    Salt and pepper





    Directions


    1. Preheat oven to 350 degrees F.
    2. Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.
    3. Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.
    4. To serve, cut into slices and serve warm.

    I was too lazy to cook last night and i was out of leftovers so dinner was cashew ‘cheese’ and TJ gluten free whole grain crisps.

    So one of the restaurants has different dinner take out specials ranging from $36.00 to $49.00. I'm stopping on my way home from work to get one and it feeds 4-6 for $46.00 and includes 2 loaves of bread, 4 sodas, a family size garden salad and chicken piccata over angel hair pasta. Yummy.

    I didn't know you still had to work. The food sounds good as well as the price for all of that.

    I think I'm having corned beef hash leftover from a late St Patrick's Day meal. Or a ruben. I dunno yet.

    Yep still working but not open to the public. We had court today but only for people in jail and by video from key West. I’m going to have to renotice about 300 cases once I get new court dates but the Supreme Court still doesn’t know how long they are going to postpone court.

    It's my youngest's sweet sixteen.
    We've been inside for a week and half now. No symptoms so far.

    To make up for the stir crazy isolation in dungeon like basement for him, I'm currently making sweet potato pie with brown sugar meringue, chocolate cinnamon rolls with cream cheese frosting and toasted pecans, Sirloin tip steaks with brown rice and steamed veggies.
    I also skipthedishes home an ice cream cake from Dairy queen so tha he actually has cake.
