    Lobster mac and cheese. Trying to surprise the DH, but I think I used too much gruyere, which he hates and I love.

    I always use a little gruyere, but I think I over did it. I added some extra sharp cheddar to even it out. Now I like it a lot less, which I feel is a fair compromise.

    But the "surprise" was more that I cooked. His work day ends before mine, so he usually makes dinner. I took the day off today, so I decided to do something nice for him since he's so perfect he was probably constructed in a lab and I've been kind of a shitty wife lately. This is as close as I get to selfless.

    Edited: I thought about making baked ziti, which is his favorite, but he likes it with ground beef (which means I have to make two) and it didn't defrost in time. So I have that in the fridge to make tomorrow or Saturday. So I'm giving myself double wife points for cooking two nights in a week. Start placing bets now that he ends up cooking it himself.

    Lasagna. Every few months, when I am stuck waiting for something/one in the house, I make up a huge batch of meat sauce and make up 6-8 'pound cake loaf' size lasagnas and freeze them. Tonight is the night to enjoy one...late getting home husband (thanks, open enrollment) and it's ready and warm when he shows up and the kid can have some before/during homework after skating practice. .

    not quite for dinner but i made two black bean flatbreads for my office christmas party this afternoon. i found an amazingly easy and virtually fool proof crust recipe on bon appétit. i made a vegetarian one with black beans, pickled jalapeños, a mix of mexican cheeses. the other one is the same but with spicy chorizo. i'll serve them with fresh cilantro and grated cotija cheese on top, and pico de gallo on the side if people want it.
