    Making my famous 'Fireworks Pasta' with multi grain french bread and olive spread. Why is it called Fireworks Pasta? Because its so full of color!

    Ingredients:

    • Three peppercorn organic noodles (Al Dente brand)
    • Green onions
    • Sun dried tomatoes
    • Green Olives
    • Black Olives
    • Toasted Pine nuts
    • Toasted Garlic
    • Salt / Pepper
    • Olive oil
    • Parmesan cheese
    I don't have exact measurements for the ingredients, its more to taste and how much of one or more you like. I love olives so I tend to load up on those.

    Take 3 cloves of garlic and cut into small pieces. Add 1tbl and 1tsp of olive oil to a skillet and heat up. Add the garlic. When garlic starts to turn brown, add some pine nuts. Pine nuts toast very quickly so keep a close eye on them. Remove from skillet when they are a golden brown.

    Chop up the green onions, green/black olives and sun-dried tomatoes.

    After pasta is cooked Al Dente, drain thoroughly. Do not rinse! In a large dish/bowl, add olive oil- enough to cover the bottom of the bowl. Add half the pasta, and mix with the olive oil. Add half of the ingredients. Then add the rest of the pasta/ingredients. Add more olive oil if needed.

    Serve on plate and add Parmesean to you liking. Enjoy!

    PS: I have Eggplant purple plates from IKEA, and I have to say, this pasta dish served on those plates is simply beautiful.

    we're going to do pork chops tonight & i'll make rice pilaf & spinach-almond salad to go with. i've got some peaches that i want to use up, so i'm going to do something with those for the pork chops...not sure yet, must google around for a recipe.

    A chinese take-away from a 'healthy' chinese place. They do half portions too, it's pretty cool. Think I'm going to have Sweet Chilli Chicken.

    I had no idea what to make yesterday for dinner because I was out of a lot of main ingredients, like meat, fish and pasta. So I made poached eggs in tomato sauce for dinner. I never really imagined eggs to be satisfying for dinner. I cracked the eggs in some boiling tomato sauce and let it cook for about 5 minutes. I added some hot pepper flakes and basil too. We had it on top of creamy polenta which was delicious. Very inexpensive meal too!

    I don't usually think of eggs as 'dinner food' either, Laura, but what you described sounds yummy. Welcome to the forum too

    Anyone have any good recipes for BBQ ribs? I really don't add too many flavours, just some olive oil, rosemary, paprika and parsley. Very bland, I know. Does anyone have any interesting recipes?

    I'm on dinner duty since my mom is out of town so I'm making my brothers a tofu miso ginger stir fry with sesame cabbage and homemade eggrolls. Taking over the world one meat-eater at a time
