    ^^oops, i'm reminded that i need to post the instructions for the stuffed squash.

    this evening, my hubby & i are cooking dinner & dessert together. we're making individual beef wellingtons (a bit untraditional...we're leaving out the foie gras) with a wedge salad with buttermilk bleu cheese dressing & crumbled bacon and red potatoes roasted with rosemary & garlic. we're making chocolate mousse for dessert.

    *fingers crossed* that it all turns out well.
    white, black, puerto rican/everybody just a freakin'/good times were rollin'.

    Ratatouille - only without the eggplant. Then I'll chuck some white fish in towards the end, and serve all that sweet, rich, tomatoey yumminess over a big fat jacket potato. *licks lips*

    I know what you mean that will be my lame dinner also and for a snack I get some natural almonds.
    All I want is some damn cookies,pie, pasta, ice cream, and chips why does that have to be so wrong?

    finally i'm posting this...i'm such a procrastinator.

    i don't use a recipe, but here are the instructions...

    take your squash of choice (i usually use butternut, because that's what we usu. have on hand) & slice lengthwise & remove seeds. place the squash halves, flesh side down, in a roasting or baking pan with about 1" of water in the bottom. bake at 350* until squash can be easily pierced with fork (approx. 1 hour to 1 hour, depending on size of squash). allow to cool & then remove most of the flesh, leaving a slight shell to fill. set cooked squash aside, & if desired, brush molasses on squash shells (i think it's good either with the molasses or without...personal preference, but it won't take away from the dish if you don't use it).

    While squash bakes, cook some wild rice according to package instructions (i think i use approx. 1-1.5 cups of wild rice for 1 lb. of sausage & 3 squash). rinse & drain cooked rice, then set aside.

    brown some bulk sausage of your choice (i get a lean pork breakfast sausage from our local butcher) with some chopped white onion & finely chopped garlic. drain off extra fat.

    mix together sausage-onion-garlic mix, cooked wild rice, roasted squash flesh, some chopped apple (i like tart apples), dried cherries (or cranberries or raisins...i prefer cherries, though), some fresh thyme (if i have it), salt & pepper, & if necessary, some broth of some kind to add a bit of moisture (i always have homemade veggie broth on hand & just use that if i need it).

    spoon mixture into squash shells & bake covered at 350* for approx. 20-30 minutes.

    Ladies, it's a sad fact of life that Carbohydrates are the devil.....But why are you tormenting yourself with salad and low fat dressing? Have some lean protein. You'll lose weight and wont feel like you're starving.

    homemade pizza...veggie (broccoli, mushroom, onion & bell pepper) for me; veggies & spicy sausage for my hubby. i'm also making a spinach & carrot salad and balsamic vinaigrette to go with.

    Ang-all that sounds great!
    We ate a big lunch out today,took home baked sweet potatos with,as they said,fully loaded & just heated up for supper.Baked,sliced ,with cinnamon,bit of brown sugar (tiny) and then little marshmallows toasted till brown & melty. omg!
