    I just made the best shepherd's pie from leftovers in the fridge. It's so good! I don't know why I don't make this sort of thing more often.

    I am sick so I made veggie soup: shredded cabbage, carrot, celery, onion, sweet potato, bay leaf, diced tomatoes, and handfuls of brown rice and green split peas. Just before eating I add salt, pepper, and red wine vinegar. This will feed me and the two dogs for a couple of days.

    Sausage rolls - I'm making them now, and we (my daughter and I) will just eat all of them instead of dinner, because we are very very bad, and it's christmas!

    Oh I LOVE quiche. Mmmm...I doubt I could get Mister to touch it though.

    We have this deal thing where I tell him which meat to pick out of the freezer for dinner in the mornings, then I will come up with something. Today he picked out pork. I am sick to death of regular pork chops...any ideas for pork?

    ^^any particular cut of pork? a shoulder roast (boston butt) makes great carnitas for tacos, burritos, etc.


    we're having squash stuffed with wild rice, apples & sausage for dinner tonight.
    white, black, puerto rican/everybody just a freakin'/good times were rollin'.

    I need to start getting Mr. Sweetpants to do that. Every afternoon I call him and it's the same conversation: What do you want.....anything is fine....then I get ill. If I have to cook the shit, at least tell me what you want.

    Something easy and good is shake and bake. I do that quite often with the boneless pork chops.

    The pork is boneless tenderloins. He says it's pork chops, but technically, nope.

    LOL, ah, too familiar! Here is a typical conversation at our house (this one happened last week, matter of fact):

    Me: Babe, what do you want for dinner?
    Mister: Ah, I don't care honey, whatever you want to make.
    Me: Okay, mexican food?
    Mister: Ugh, no
    Me: Italian?
    Mister: Nah
    Me (tapping foot now and shaking my head): Ok, what DO you want?
    Mister: *sigh* I don't know honey...
    Me: How about meatloaf?
    Mister: SURE!!!!!!!! You're gonna make Sweetie's recipe right???? With extra sauce, please?????


    Seriously, if I have him pull out the meat, at least I get somewhat of an idea as to what he's in the mood for. It works most of the time, but today I am just tapped from lack of ideas.

    Mmmm, shake and bake sounds yummy. Haven't done that in awhile. May have to make a quick store run tonight, thanks babe!

    i've done a pork tenderloin marinated in chimichurri sauce & then roasted in the oven...it was awesome!

    recipe for a good chimichurri sauce: Tri-Tip in Chimichurri Sauce - Grilled Tri-Tip Recipe

    another good one with a pork tenderloin is to just salt & pepper it, sear it on all sides in a pan on the stovetop, then roast it uncovered in the oven. about half-way through the roasting, start basting it heavily with jalapeno jelly. mmmm, it's great!

    i don't really have a recipe for the stuffed squash, but i'll come back to this thread in a bit & post the instructions.
