Since I'll already have the oven going I'll do new potatoes with rosemary, balsamic, and olive oil. Deciding between broccoli or carrots, but I have all day to decide that.
Yum. I'd recommend carrots. I make something similar and broccoli will get too overcooked.

That is one of my favourite all-time soups. The ultimate comfort food apart from potatoes, lol.

it was really good! my hubby especially loved it!

i used this recipe (Butternut Squash Apple Soup Recipe | Simply Recipes) & made a few changes...i roasted the squash before using it in the soup (roasted @ 350 for a little over an hour with about a cup of water & 4 smashed garlic cloves) & i added a finely chopped clove of garlic to the onion, carrot, celery mix (we love our garlic around here! ). then, i used 1.5 apples, since the squash i had was pretty big. i salt & peppered it after adding the roasted squash, apples & broth (i used a little over 4 c. of broth). then, after pureeing it, i added some nutmeg & salt & peppered it again.

i topped my husbands with some homemade croutons & grated parmesan & i had just the parmesan.

we get a butternut squash every week, so i'll probably start making this quite a bit.

Hubby fav: sirloin steaks (the only kind I let him have anymore)
Baked potatoes -serve with lots of chives, non fat sour cream, smidge of butter)
Green salad(with onions, carrots & black olives) with lemon juice drizzled over & 3 dashes of Cavenders seasoning ,tossed it tastes like the high cal dressing!

That's the same one I make, it is good. I love that blog. I've never made anything from it that wasn't delicious. I'll put it in the recipe section.

^^Actually, I just checked and it's already there. I posted it a while ago but just forgot. Anyway, it's a great recipe and I'm going to make it soon since I have a big squash that's need to be cooked ASAP.

Lazy night- grilled cheese (sharp cheddar and a nice whole grain and oat bread) with tomato soup. The boyfriend is a sandwich guru and toasts them perfectly!
