    I made baked potatos with a spinach, mushroom, garlic and ricotta cheese topping-simple to make, but delicious.

    ^Dayum. I'm gonna have to try that. WOuld go with the leftover chicken and the Romaine Hearts sitting in my fridge. How exactly did you make the topping, Venus? Do I need fresh spinach? I'm going out soon so I could pick that up along with the other stuff I'd need.

    Since you mentioned spinach, I'll assume you were asking me Mira.

    I used frozen spinach. I baked the pototos (with skin), sauted some grated garlic cloves in one tsp of olive oil, and then added the mushrooms and spinach (both frozen), and sauted those for a few minutes. As soon as it was done, I turned off the heat, added the ricotta, stirred the whole thing, and used it as a topping on the potatoes.

    I can't tell you quantities-I only made enough for two small potatoes, so just go with your preference/how much you're making. The result was quite delish, and not heavy at all!

    Thanks to the barley, my leftover soup thickened beautifully in the fridge overnight. I tipped it into a little casserole dish, topped it with some garlic mashed potatoes from another meal, and made a nice individual serving of shepherd's pie. I <3 leftovers!

    Somebody else is cooking -- yippee!!-- but I think it's lamb. My gf is a great cook so whatever it is, it will be fab.

    I went out to eat with family to this French resturant called "Bistone". I had a Green Salad, Pomme' Frites, and Steak au Povire (sp?). Very good.
