    Q. I need to find out what Chicken Oscar is. I am going to a wedding and this is one of the selections on the menu to pick from, and I do not know what it is. I have to get this response out soon. Please help me.

    A. The classic dish, Veal Oscar, has been rendered more politically correct and certainly more economical by your hosts’ caterer. Reputedly named for Sweden’s King Oscar II, who reigned 100 years ago, the most traditional preparation for Veal Oscar has veal medallions topped with crabmeat and asparagus and a little béarnaise sauce.

    Now, you haven’t told us the other choices on the menu, so we can’t help you make a truly informed decision, but if the caterer doesn’t overcook and dry out the chicken, Chicken Oscar should be a good choice.

    I had this last nite and it was excellent. Got it at Shoprite where they have the home cooked section.

    Have Boneless Pork Chops tonite and not a clue what to do with them. Probably just marinate then grill them.

    OK,get 2 big very ripe tomatoes,skin then chop them real fine.
    Set on a large frying pan,add salt and pepper,spring olive oil and boil till only the oil remains.
    Make an omelette of 7 big eggs,throw in tomatoes and cook like scrabbled eggs.

    Sounds good effie. I find that it tastes better when the foreign person makes it! My ex MIL's cooking was so good and she always thought I was nuts for thinking that because she wasn't that into it. But there's something about a person cooking the food of their own country...

    i know,whenever i tried cooking abroad,nothing good came out.
    It,s just because Greek tomatoes ,American or English ones taste totally different as most veggies do..
    I cook well in France though..

    That's what my MIL said too!

    She was the one who introduced me to Japanese eggplant - the long skinny kind that they use in middle eastern cooking. I'd never seen them before, and I'd never touched eggplant like she cooked it in my life until I met her. YUM! With ots of OIL and white YOGURT!!

    That moussake you cooked sounds killer too, effie.
