I cheated. I stopped at a deli and picked up some salad sammiches.

Soj, tonight I am making my artichoke/rice/feta casserole. Dead easy and healthy. It's posted here somewhere.

Maybe I'll even send you some!

I still want to try that mushroom pasta and sour cream casserole - it sounds so good.

I'm hoping to get my second wind any moment now, so I can get up and make something.

Mmmm..... just made some pumpkin muffins.

Delicious and easy as pie to make:

All you need is a box of spice cake mix and a 14 oz. can of pumpkin. Mix together and bake as directed.

(Don't mix any of the other ingredients the cake box calls for. )

just feasted on cheesey bread with spaghetti and a special thick sauce I made with all kinds of goodies and spices including zuchinni(several different kinds), eggplant, tomatoes, onions, peppers(green and hot), etc. ALL fresh and cooked in olive oil...mmmmm good! Cold here tonight!
Made some chicken soup with potatoes and carrots as well. Gonna be cool here and need some hearty foods to get by (without turning on the damn heat). Going to make a nice roast tomorrow. And watch football! YAY!

I know..what the hell is wrong with me?

I just love soups and stews and thick tasty toppings for different pastas. Good for you(generally) and not hard to make..and usually not to much $$$ either. And making a thick hearty chunky nutrient-rich topping for spaghetti makes eating pasta not seem so bad-especially if you cut down on the pasta amount and increase the topping amount. So nice when it gets cool in the autumn and heating up the kitchen is actually a good thing.

I need to learn to make some cheap-ass(as in $$$) casseroles too now with fall and winter weather coming. Simple stuff with potatoes, carrots, pastas, onions, beans, lentils, etc and other cheap long-lasting ingredients. I actually like cooking them and can practically live on them. Love soups too..good thing that simle soups like onion soups, potato soups, etc. are faves and are cheap to make(and can be frozen too). I like veggie soups but they can get expensive a bit with all the veggies now.

^^I love making one-pot dishes myself. I eat a lot of soup, casseroles and stews in the fall and winter. I love pearl barley and beans, two ingredients that make most soups/stews taste better and provide protein. The more soup I eat, the more weight I lose. It works every time.

It's actually kind of cool here; I'm totally making a pot of chilli tonight or some stew type thing...

I live off soup. That all I try to eat for lunch. It does help keep the weight off you, PB and I find it feels me up so much more than regular food.

    Tonight I am having
BBQ chicken on the grill, with a homemade BBQ sauce
    garlic mashed potatoes
    broccolli casserole
    homemade cheese biscuits
and brownies for the husband's dessert.
