    Making kids favorite meal Corn on Cob, marinated flank steak and mashed potatoes.

    I'll eat an ear of corn and maybe a PBJ sandwich.

    Hubby is taking me out to eat BBQ. There is this little place in the town I grew up in that has the best BBQ!!

    I am not sure. For some reason I am frying alot of shredded carrots in olive oil and spices right now..but I have no idea of what to do with them? I have fresh zuchinni, onions, tomatoes, potatoes, peppers, garlic etc. etc....I was thinking of maybe some kind of veggie stew like a take on ratatouille..??

    Any ideas anyone????

    I was also thinking of mixing the carrots into a cake or quickbread mix to make a kind of carrot cake thing..after cooking the carrots and then blending them up?

    Ratatouille sounds like a good bet. It's great to freeze, too. In fact, maybe I'll make some myself since I have all the ingredients.

    You can just boil/steam and mash the carrots for cake. That's what I do.

    I ended up using them in a 'red beans and rice' take..along with extra amounts of peppers, onions, and tomatoes. turned out very well. Yummy. the carrots fit in just fine. Probably having them very finely minced helped.

    It's yet another cold, wet and miserable day here so I'm making a fresh mushroom and pasta casserole with sour cream, sherry and a few other veggies. I'll serve it with cauliflower and peas.

    Mmmm! that sounds delicious. It was cold and gross here so I made some tomato basil soup and had some rye toast with cream cheese. Not fancy at all but it def hit the spot.

    It's pretty tasty *takes last bite* and it's not that fattening. I use low-fat milk, no-fat sour cream, a little butter -- you have to have the butter or it doesn't taste right, same with the 1% milk -- and whole wheat penne. It's pretty healthy, really. And the rest is just veggies. I put a little parmasan cheese, panko breadcrumbs and cayenne on top for a thin crust. Of course I'm washing it all down with wine, but I'll walk tomorrow. Uphill!

    I made myself some homemade fried chicken with cajun potato. Not healthy, I can't help but love southern cooking. I'm finishing it off with a slice of pecan pie.
