I ate at a restaurant last night. The appetizers were great. One was pita with humus, red pepper humus and what could have passed for salsa. The other was pita with a pistachio encrusted piece of goat cheese. The entrée was only okay but it wasn't bad. I had fusilli with chicken in a pesto cream sauce (didn't have any real flavour). For dessert I had an AMAZING creme brulée that was made with amaretto and espresso.

See, that's the thing about being on a diet, it takes TIME and sometimes extra money to make things that are delicious and low in calories/carbs/fats/sodium/acid - all the things that make you gain weight or unable to lose it. My ex is foreign, I used to make some incredible dishes.

I bought a big salmon fillet. So I'll marinate it with something, I don't know what though, and bake it in the oven...with some potatoes and beans.
Gimme some ideas ladies, what can I do with salmon?

This is easy and can be adapted: Mix soy sauce and rice vinegar, some ginger, chopped garlic, some green onions, some chilli peppers or flakes, salt and pepper. Put fish in large plastic bag and pour in marinade (about a cup), reserving about a 1/4 of it. Or just pour it over the fish in a pan and cover.

Let marinate an hour or so (the longer the better -- when I do a whole fish I let it sit overnight), then cook. Just before serving, spoon the rest of the marinade over the fish.

You can also add other herbs like cilantro and I usually garnish the fish with a few lime or lemon slices.

If you don't have rice vinegar, you can substitute lemon juice or regular vinegar, but I figured you'd have rice vinegar.

I'm having home-made broccoli soup from two nights ago. Blah...but I have lost nearly 4 pounds. Having the flu and not eating last week helped. hehe

I'd use the cider because the balsamic might be a bit strong with the soy.

    Bad bad Japper.

Kung pao veggies. With soy sauce. I don't care, I love it & the thing about Chinese food made me hungry for it!

Mira, I love Middle Eastern food so much too. I was really impressed bc the restaurant was actually kind of fusion food. A little of everything. It's funny because right now I live in a small city but the amount of great restaurants is pretty impressive for such a small place.

I made a homemade pesto/vegetable soup for dinner last night, it was good.
