    Here it is, if you try hope you'll like it.

    2 tablespoons peanut oil
    1 red or yellow onion finely diced
    4 cloves garlic finely chopped (I use the garlic press)
    2 tablespoons grated fresh ginger
    Crushed red pepper to taste (we are spice wimps so added about 3 pinches and that gave a nice flavor)
    salt and ground mixed peppercorns to taste
    4 cups flavorful stock, chicken, vegetable, etc.

    2 cups fresh chopped tomatoes or 2 cups canned chopped tomatoes, with liquid
    1 cup or more collard greens, roughly chopped (I used kale)
    1/2 to 1 cup peanut butter, I used about half a cup and that gave a subtle flavor. I used smooth, you could use chunky too I am sure.
    1 cup coconut milk

    Cook the onion in hot oil until golden brown, add garlic and ginger and fry until fragrant. Add crushed red pepper, salt, and black pepper. Pour in the stock. Stir the potatoes and bring to boil; reduce heat to low, cover the pot partially with a lid, and simmer for 15 minutes.
    Stir in tomatoes, greens, and peanut butter . Partially cover the pot again and continue cooking, stirring occasionally, 15 minutes. Add coconut milk and simmer another 5 - 10 mins.
