I made a copycat recipe of Red Lobster's cheddar bay biscuits yesterday and can't stop eating them.

My favorite tortillas right now are the jicama ones from, you guessed it, Trader Joe’s! I think they’re amazing. They have very little flavor and I use them for hot and cold foods. Amazing with tuna salad, but equally amazing with tacos. I’ve been making stir fried veggies for lunch during the pandemic. Whatever I have left in the fridge that needs to be used. I mix up the seasonings. Right now my favorite is cumin, coriander, and some all spice. I put it on the tortilla and add some Persian yogurt. So good.

i wonder if those are a regional thing because i've never seen them at my TJ.

qwerty, i found the TJ quinoa tortillas you mentioned but the ingredients don't work with my AI diet they look good though, and very soft and pliable like real tortillas. i'll definitely try them when i can relax the diet a bit.

^^They might be. They're usually in the cold produce section. near the cauliflower wraps and cut fruits and veggies.

Yeah, these are pretty much thin slices of jicama. They have that little crunch, but the flavor is so mild.

I liked jicama the two times I tried it. These tortillas sound good.

I made the lemon-ranch shrimp dish again, this time I added a bag of frozen broccoli, thawed and drained. Good stuff. I have to find ways to incorporate vegetables into my meals. Salads can get tiresome.

jicama is amazing. i love anything crunchy and tart and salty and spicy so jicama sticks with lime juice and tajin or any other kind of chile salt are my go to summer snack.

Sput, the quinoa wraps are not perfect, but they'll do in a pinch. I've got a whole freezer full of Siete cassava tortillas and cauliflower rounds so I'll work through them for awhile and then reassess how to effectively deal with the loss of the brown rice tortillas.

Kris, those jicama tortillas are a find! I'll have to check them out during my next TJs shopping trip. Hopefully, my local store carries it.
