    The best eggplant Parmesan casserole in the world made by my brother in law Carlos. He’s such a great cook but eggplant is his forte. Yummy!!!

    My friend who is an investigator for public defender's office just called me to come over to get some of his homemade Mac and Cheese. Soul food Mac and Cheese. I'm in heaven. He added a slice of ham as a surprise. I'm so lucky right now.

    it's been a long week and i needed some comfort food.

    GF penne with a creamy corn sauce
    I've been obsessed with this recipe since I saw it this summer and i've made it a bunch of times, and vary the herbs depending on what i have lying around. I make it with canned corn if I don't have fresh or frozen. You soften the corn with scallions in a pan, add a bit of water and then purée the whole thing in the blender. Then you put it back in the pan with some butter, add a shit load of grated Parmesan, pepper, salt and red pepper flakes for heat, until it's all creamy. Add the cooked pasta, a little bit of pasta water, serve with a squeeze of lemon, chopped parsley and some more Parmesan and pepper.

    it sounds like it would be amazing with fresh corn. i want to put fresh corn everywhere, salads especially.

    I've made it with both and yeah, fresh is great but even canned isn't far behind. and i could put fresh corn in everything too.

    really? i am surprised. yes, for a snack sometimes i will grab a can of corn (yes, judge away) but i thought it would have a bad texture if you blended it.

    as for food, i am stuffing my piehole with rum, vodka, and this local eggnog that is so yummy.

    not at all, it comes out super smooth and creamy.

    And there is nothing wrong with canned corn. I think a lot of canned vegetables taste like shit and need to be eliminated from the face of the earth (canned carrots, mushrooms, green beans) but there are definitely exceptions, corn and petit pois especially.

    It's funny because my kid only likes canned green beans. She loves fresh or frozen peas, won't touch canned. Every other vegetable has to be fresh or frozen. She'll eat fresh green beans if I sauté them with sesame oil or garlic, but other wise loves canned with a little bit of butter.

    Canned carrots are the devil.
