    i made samin nosrat's conveyor belt chicken last night for dinner and i'm having leftovers on top of an arugula and endive salad.
    if you haven't had this before, do yourself a favour and make it ASAP, it's so fucking good, and so easy. i basically make it at least once every couple of weeks.

    can't find a good version of the recipe online, it's in her book for those who have it. but this is basically it (from reddit):

    "Take skin-on chicken thighs. Salt and remove the bone. Place into a cast iron pan on medium heat with approximately 3 tablespoons of olive oil. Ensure that your pan is well heated before placing the chicken thighs SKIN SIDE DOWN into the pan. Then, take a second pan (or foil wrapped can of tomatoes) and place on top of the chicken thighs, so they are weighted down. Leave them for 10 minutes, until fat has rendered and the skin is crispy. Flip and cook uncovered for another two minutes."

    i remove the bones from the thighs first and then rub salt and pepper on them, on both sides. sometimes i'll do a mix of TJ's everyday seasoning, salt and pepper. but really, this doesn't need much and even with just salt it would be delicious. i do them in a cast iron pan and then i use a slightly smaller cast iron pan to weigh down the chicken (wrapped in tinfoil to keep it clean).

    I just woke up (it's Sunday, leave me alone) and I am enjoying a huge coffee with gingerbread syrup. I made the syrup yesterday and it is pretty good. Now I need to figure out how much to use for the perfect cup. Maybe a bit more next time.

    I've got a pot of homemade beef stew going. I'll make cheddar garlic biscuits later. It's November, it's grey, it's cold. Perfect meal for football watching.
