    Emeril Lagasse has a Cajun seasoning that goes great on it; my cousin's wife is a caterer and she made some for brunch a few years ago and it was off the hook.

    i just do it in a a non-stick pot on the stove, just continuously stir it.

    Grits is coarse-ground cornmeal, like polenta. Porridge is usually oatmeal isn't it?

    Now that you mentioned it I realized this is exactly where I found this recipe so thanks Bitter, we love it. I've already made this twice in the crockpot and will continue to make it often.
