    Trying to clean up my food a bit - sheet pan dinner with kielbasa, Brussels sprouts, spinach, cherry tomatoes, potatoes, peppers and onions drizzled in olive oil. I was so ready to order out and I remembered I had bought veggies from the new organic place and needed to make use of them. I had a shortfall in my escrow this month, so I have to cut back on eating out. But I am getting back on track with my food.

    Its very common in Colorado, that's where I got it from. I just use the frozen hash brown potatoes, blanch/thaw them for a bit in chicken broth to give them more flavor, and then give them a quick sautee in bacon fat. You can make them crispy or not as you choose, but I tend to leave them soft when using for burritos. Adding the potatoes seems to make a breakfast burrito a heartier meal. I often made them for the boys when they were rushing out of the house to get to school.

    I've made a breakfast casserole using those potatoes a couple of times, and they've been a hit each time. I just thaw the potatoes, put them in a 9x13 pan and season them with garlic salt, onion powder and pepper. Scramble a few (about 8) eggs, and pour over he potatoes. Sprinkle cheese and cooked chopped bacon over the top, and bake at 350 degrees for about 30 minutes until eggs are set.

    A co-worker gave me a recipe for a casserole using shredded hash browns that I've been dying to make; she made them for a potluck as a side dish, and they were sooo good...

    Shredded hashbrowns are one of my all time favorite foods. Would definitely be one of my last meal on death row requests.

    I'm sharing a huge ass plate of steak nachos. And a margarita but the nachos are the star of this food coma.

    Here's the recipe for the shredded hash browns casserole my co-worker gave me:

    I bag frozen shredded hash browns, thawed (2 lb. bag)
    1/2 cup chopped yellow onion
    1 green bell pepper, chopped
    1 can cream of mushroom soup
    1 pint sour cream
    1/2 stick of butter, melted
    2 cups shredded cheddar cheese
    1 tsp salt
    1/2 tsp pepper

    Mix all ingredients together, spread in a greased 9x13 dish, bake at 350 degrees for 1 hour.
