    Those donut muffins looked nice, thanks for posting the recipe

    I’ve just had cheese on toast as I have suspected mono and I hurt am knackered & feel sorry for myself!

    I just finished up the corn chowder that I made over the weekend. I am always a bit sad when I eat the last of something, especially if it was really good.

    a late lunch of my favourite dish at pręt, the salmon, avocado and mango balance box which is just that over a bed of quinoa and baby spinach, with some pomegranate seeds and pickled veggies. it's my go to when i'm lazy and didn't bring lunch to work.

    I’ve just cooked keto “mashed potato” with cauliflower- we’ll see how that goes with the polish sausage & tomato sauce thing I made (tomato’s from scratch, skinned them & everything!) it was pretty good when I tasted it.

    Instructions

    Preheat the oven to 425°F. Lightly grease a standard muffin tin or line with 12 paper muffin cup.
    In a medium-sized mixing bowl, cream together the butter, olive oil, and sugar till smooth.
    Add the eggs, beating to combine.
    Stir in the baking powder, baking soda, nutmeg, salt, and vanilla.
    Stir the flour into the butter mixture alternately with the kefir or milk, beginning and ending with the flour and making sure everything is thoroughly combined.
    Spoon the batter evenly into the prepared pan, filling the cups nearly full.
    Bake the muffins for 15 to 17 minutes, or until they're a pale golden brown and a cake tester inserted into the middle of one of the center muffins comes out clean.
    Remove them from the oven, and let them cool for a couple of minutes, or until you can handle them. While they're cooling, melt the butter for the topping and dip the tops of muffins into the melted butter, then roll in the cinnamon-sugar.
    Serve warm, or cool on a rack and wrap airtight. Store for a day or so at room temperature.
    Yield: 12 muffins.
    Thanks for posting that, Constance! I'm going to save it on my computer with all my other recipes and hopefully one day I'll actually get a chance to make those. I actually miss baking... and I love anything rolled in butter and cinnamon. That sounds so good right about now...
