    Been doing intermittent fasting to break my plateau for about a week now. But visiting Mom at the home today has thrown my schedule off so I am eating, for me, a late dinner, lobster cake, oven fries and brussels sprouts.

    Ordered Italian last night so I'm eating leftovers of lasagna, chicken marsala, manicotti and pasta fagioli. Just a little of everything.

    I had some leftover roast chicken that I needed to use before it went bad so I made quesadillas and threw some salsa together. I’m thrilled with how the salsa turned out and wish I’d made a big jar instead of a couple of cups.

    I roasted a couple of Japanese eggplants with a quick miso glaze, broiled the shit out of them until they were pretty disintegrated. Ate that mashed onto a piece of sourdough toast.

    It's eggplant season at home and I love it!
    I roast and mix them with toasted sesame oil.
    Sometimes I roast some red bell pepper too, and add it to the mix.

    yum. love eggplant and I love that my grocery store has a good variety, they carry big and small Italian ones and almost always have Japanese or Chinese.

    I just had a very sad salad and antipasto plate at a boring lunchtime event. Everything on the plate is droopy and bland, kind of like all the speakers so far.
