My MIL is here and making a Persian stew called Khoresh Karafs, which is basically celery stew. I think it calls for lamb, but she uses beef. Served over delicious basmati rice and an extra treat of tahdig I'm so excited!!

A salad consisting of chopped cucumbers (lots!), red onions, lettuce, lightly steamed califlower, red and yellow peppers. Topped with sunflower, chia, flax seeds and soy nuts. Drizzled with leftover chimichurri sauce that I made for my papa rellenos the other day.

leftover thai take-out delivery from a few nights ago. there was a bit of massaman curry with beef leftover, and some panang curry with shrimp. i just mixed them together and reheated and am having it sans noodles or rice as a sort of curry soup.

I like quinoa but I'm gonna stop making it in my rice cooker...I read online that you can cook it that way, but it always sticks. Love it cooked in almond milk. Lost another 1.6 lbs!!!

Today - a veggie omelet with cheese, a small helping of home fries.

    I'm jealous!

I have a really screwed up back so I'm terrified of exercises. I always end up in pain and not the good body building kind.
Short of starving myself, it's almost hopeless to lose weight. I eat pretty healthy as it is.
I'm happy for you! Keep going!

Back to topic......... My two boys and I are on a sandwich kick thanks to our Subways' veggie delight that we fell in love with. I make versions of it at home.
Roti wrap; havarti cheese, sliced lettuce, green peppers, caramlized onions, red onions, marinated sundried tomatoes and sliced tomatoes (can you tell I like tomatoes?), olives, sliced cucumbers, marinated pickles and jalepeno peppers (I put the peppers in a jar of pickles with chopped garlic. It's spicy yummiliousness!), and organic sweet mustard dressing.

I added beef, ham and pastrami to the boys'. Mine was veggie and....no.. I'm not pregnant
