    Black bean patty I made and a side of slivered (is that the term?) zucchini, carrots, bell pepper, and red cabbage that I roased then mixed with some Dijon mustard and balsamic vinegar. I had some dates after for dessert. Really good.

    I've lost 3 lbs on my diet these past 2 weeks and was staying strong... until I found a small jar of toasted coconut granola that was a Christmas gift I'd tucked away. About 7/8 of the jar is gone now. At least it was downed with unsweetened almond milk. Right after I was reminiscing about how much I miss cereal, I find this jar. I expect the other 1/8th to be gone soon. Oh self-control, how I dream of you. I had a nice little makeshift stew about an hour ago, as well (brown rice, chick peas, broccoli, carrots, peas, mushrooms in tomato sauce).

    Toasted coconut anything sounds so yummy. I love coconut.

    I'm getting ready to eat a kid-friendly dinner. Homemade baked chicken strips with panko bread crumbs. Nothing says Friday night like this!!

    Mmmm. I would love to have a nice, heaping plate full of some good collards. It's been a long time since I've had some good ones. My grandparents used to make some delicious greens.

    pho soup. at home. was supposed to be at a birthday party and instead i'm on the sofa with a sore throat trying to eat soup. but at least it's good soup.

    The Asian market up the street from me sells some that are uncommonly good. I may buy some there and put them in the slow cooker. With peppers and onions.

    ^ Do you use a recipe for your Pho ? I have wanted to try and make it ,I had some in Seattle at some off the wall place and it was amazing

    Sounds good. There used to be a restaurant in LA that had some really good ones. They went out of business a few years ago. Boy, they were good.

    Oh believe me, it was. Just ever so slightly sweet (haven't had sugar in a few weeks so it hit me so nicely) with pumpkin seeds and cashews too... Nedless to say that remaining 1/8th is no longer there.
