    I didn't really use a recipe. From what I can recall, I cooked a heaping cup of dried black beans, and when they were done, I added: half a package of Yves Veggie Ground Round, a chopped onion, a couple of cloves of chopped garlic, a chopped red pepper, a cup of frozen kernel corn, 2 cups of diced tomatoes with liquid, 2t chili powder, 1t cumin, 1t onion powder, 1/2t garlic granules, a bit of smoked paprika, and salt to taste. And then I just let it simmer for a while to cook the peppers and onions and blend the flavours. I most likely added a bit of water as well. I like my chili on the soupy side because I eat it over brown rice or potatoes.

    It's not terribly spicy, which I prefer. I tend to like my food on the bland side. My daughter really enjoyed this. I think she ate about half the pot cold out of the fridge!

    Pesto tortellini salad with roast pumpkin and baby spinach and a big scoop of wild brown rice salad on top. I bought it from the salad bar downstairs and it looked so good a whole family of English tourists ordered the same thing.

    we just finished salmon soft tacos (i seasoned the salmon with a chorizo spice blend before baking it) with cabbage, pineapple pico de gallo, and guacamole. i also made sopa de fideo on the side for my son.
