    Sooo,sharpen your forks,people.
    1 kilo very minced meat,half beef half pork (if you dont eat pork,beef it is)
    5 big potatoes,4 big black shiny and pretty eggplants,i kilo nice sweet zuckinies(I KNOW i misspelled it but you know what i mean,someone correct it for me) olive oil,one can chopped tomatoes or 3 fresh ones.Salt ,pepper,ground nutmeg

    sorry ,had to google a spice i use and translator says *spice*so il just write it in greek and hope you can find it,or Yanna could help.Μπαχαρι.that is the greek name.So,we continue.
    5 big eggs,1 cartoon of milk(low fat if you wish, 1and a half litres)200grs of unsalted fresh butter ,a box of corn flour(must be 250grms but i ll check tomorrow and tell you).Also a big red onion.
    Now ,you put in a kettle some olive oil and sautee the finely chopped onion,when blond and shiny you put the minced meat and sautee until brown.ONLY THEN you salt and pepper it,if you salt it before meat becomes hard,you hear?You add a generous pinch of nutmeg and the other spice with the greek name.Keep stirring until all is mixed well and it smells all nice.Then you pour the chopped tomatoes cause,some more olive oil and cook it until meat is done.This is actually my meat bolognese sauce,so you can use it with spaggettini and cheese or mashed potatoes and a green salad or rice,now i think about it.
    We continue on moussaka.Peel potatoes,slice them thin and round and put them in water to cover.Do the same with eggplants only the water here is salted.Leave eggplants in the water for at least 30 minutes.Clean and slice long the zu...nies .Pour olive oil in a large frying pan ,dry vegetables and START FRYING!Now you dont really have to fry the living daylights out of them.just make them soft and a little bit crispy.You need to add oil as needed.(and have a truckload of the stuff,of course)Put the fried veggies on paper towel to suck the extra oil ,we must think of your delicate stomachs.In a large deep baking pan we spread first potatoes ,then eggplants and zuc..nies,to cover the bottom.Then we pour the meat sauce on top.keeping all extra liquid in a bowl,meat must be almost dry.We spread the remaining veggies on top of the meat that covers nicely all veggies.Time to make the sauce ! Pour milk,cornflour ,butter ,in a kettle,salt and pepper it and add a nice pinch of nutmeg.Stir it real good with a wooden spoon until there are no lumbs and the mixture is smooth(never mind the floating butter).Then start the fire,low boil it ,stirring all the time.Break the eggs and keep them ready.Keep stirring until your sauce becomes thick and smooth.Then shove the eggs in and stir fast until yello_ish and smooth.Pour it on top of the veg_meat mixture,spread it evenly,move it a bit with a fork to soak it up a bit.Spread the surface with some of the meat sauce liquid you kept and spray with some grinded cheese of your choice(i use regato cheese)bake in 180c for about a hour.Let it seat before serving..the end.

    I looked at the bottle for the English name. It's called allspice. It's perfect for Arabic foods.

    I don't really have a moussaka recipe cause it is not something I have attempted. My father makes a killer moussaka so if I want it I request it from him.

    Oh,i need to add that there is a greek speciality we call pastichio.If you want to make it,you make the same meat sauce and the same top sauce,you just boil 21and half packs of the biggest macaroni you can find(nr 3)the ones with a hole..lol.Strain them well,pour them in baking pan,mix them with fresh butter while hot until butter melts,spread any kind of salty shredded cheese you prefer and keep a third of them in a bowl.Now spread macaroni at the bottom of the pan,add meat sauce taking extra liquids off,arrange the third of macaroni that you kept on top and finish with the beshamel sauce exactly like in moussaka!
