    Kangaroo is fantastic too - as lean and tender as the best quality fillet steak.

    We go on vegetarian kicks from time to time but it's for health reasons, not moral ones. However, giving up eggs and cheese too would be VERY hard and eventually we get lured back into our evil carnivore ways with a delicious bacon sandwich. I read somewhere that it's always bacon that makes vegetarians fall off the wagon.

    I had kangaroo loin and liked it much more than beef steak. Just very hard to find in the US.

    My family grew up with a can of bacon grease on the stove. My mother saved the drippings to fry potatoes and to add to casseroles. Bacon would be hard to give up for good.

    Bacon grease is always good to add to biscuit dough too. It gives it a nice subtle flavor.

    I'm convinced it was the devil that came up with bacon because it's so good tasting but so bad for you at the same time. The smell is alluring.

    I have had buffalo meat and it's good. We feed one of our cats raw meat and buffalo is his favorite.

    The bacon thing is true, but I like turkey bacon now. I served it to my sister, who's a bacon addict, and even she said it was pretty tasty.

    Has anyone here ever been to the western part of Michigan? There's a small chain called "The Chicken Coop." It's really like a lot of family-run joints around the country, especially the South. I walked in and they had trays of chicken parts dipped in flour ready to go in the fryer. I ate an 8-piece box by myself for like, $5.00! They also had shrimp and fish baskets - all fresh, not frozen.

    I also LOVE Maryland fried chicken, which is oven-fried. My dad used to make hundreds of trays of these when he was a mess-cook in the Navy. He made it at home for us too and it's one of my fondest memories. I always thought he was making it up, you know - like to be a smart ass - "It's not KENTUCKY friend chicken; it's Maryland " ('cause we lived in MD at the time). So imagine my surprise when I found out that there really was such a thing.

    Anyway, I too prefer to buy and eat organic and non-massed produced fruits, veggies, meat and poultry. The taste is fresher and stronger - like when I was a kid. But I'm the last person to start "preaching" about the chemicals, cruel practices, etc. about non-organic products. I am weak, I pray to the Lord, but when I have the jones for it, rarely do I have the strength to pass up a fecal-laden, piss-marinaded fried chicken from Church's, KFC, ChicFilA, Popeyes, Hardy's...

    I just completely lost my taste for that kind of food. Even the smell revolts me now. KFC especially stinks. Plus, I once lived next door to one and apart from the stench, the fucking bucket squeaked! It drove me mad.

    I agree with you, I still don't like store-bought eggs, there is just something about the fresh ones with the yolk being almost orange. I just love 'em. My mom and her husband still plant a massive garden every year - in part, to lure their children and grandchildren over for free fresh vegetables and in part because it's safer, cleaner and tastes better. My mother also still raises her own pigs and chickens and in the fall, she slaughters a few of them for the freezer. I don't think that's wrong.

    Bacon is from the devil, so delicious and makes the BEST roux EVER!

    I will try to take the time and post some of my cajun recipes - but we're just talking gumbos, etouffes, things like that - just the staples.

    We used to have a couple of chooks that scratched around in the back yard and the eggs were absolutely fantastic - "straight from an angel's ovary" as my son would say (!?)!)

    11 !!! (he was doing sex-ed at school at the time and I think Ovary was one of his spelling words, plus he has a very "mature" sense of humour - or maybe he read it as a joke on MSN LOL). At least he knows was an ovary is FOR.
