Thread: Favourite lazy summer meal

    I have a great recipe for Summer Cucumbers that is so refreshing. Mods, you can move this to recipes if you want to, but I thought that it might be more appropriate in the "summer meal" section as it's seasonal.

    2 cups thinly sliced white onions
    8 cups thinly sliced cucumbers
    2 cups sugar
    1 cup cider vinegar
    2 tablespoons salt
    2 teaspoons celery seed

    Stir the onions gently into the cucumbers. Mix together the sugar, vinegar, salt, and celery seed. Pour the liquid mixture over the cucumbers and onions and put into a large glass or plastic container in the refrigerator. Let the mixture marinate for a couple of days before eating. Eat cold.

    A dollop of cottage cheese,

    a portion of cubed fruit,

    some jello,

    a banana breaded with brownsugar/breadcrumb mix, sliced down the middle

    a portion of melon slices

    and a bit of garden salad on the side.


    light, refreshing, tasty and easy.

    Grilled shrimp skewers, coated with butter and lemon pepper
    Grilled veggies, peppers, onions with a sprinkle of Cajun spice.
    A medium rare, grilled steak that has been marinading in red wine for over an hour.
    Baked potatoe, stuffed with or without cream cheese, grated marble cheese, sour cream, butter, chives and real pieces of bacon. It's a lazy Summer meal because I do all the prep work the night before. Nice!

    Showing my midwest roots here.

    Brats with corn on the cob. We also cube potatoes, put inside foil sprayed with Pam, a couple tablespoons of butter and a lot of Season Salt. Grill along side the Brats.

    Either Strawberry Shortcake or Banana Spilts for dessert. Then a nap afterwards.

    This sounds like heaven right now considering is 10 degrees F today.

    One of my favorite meals on a hot summer day is a mixed green salad with cucumbers, black olives, and grilled chicken strips. For dessert a variety of different melons. I love summer food. Fresh fruits and veggies, grilled everything....Yum.

    This sounds very refreshing and I am going to make it if we ever get any summer around here.

    All through the South, we all grow tomatos-beefstaeak is the favored brand by many. Anyway-one Southern favorite loved by all:Just tomato and mayo sandwiches on very fresh bread-any kind. Homegrown ,really ripe juicy tomatos-yum!

    I love scrambled eggs with tomato and feta cheese.
