    If I had to pick it would be southeast Asian. Thai and Vietnamese are the best.

    What Belgian dishes do you like? I don't much about that cuisine...except for chocolate.

    As for picking one, I could cheat and say American and get the best of all worlds (or at least most).

    Vietnamese. (If someone made it for me, I can only cook 2 dishes)
    Close second is Greek (I eat that almost every day).

    As a vegetarian, my faves are:

    Middle Eastern - lots of cheap yummy protein, I eat a ton of Lebanese lentils and rice, felafels, hummus and eggplant, tabouli etc

    Indian - paneer with spinach or almond dumplings, aloo and eggplant, all the dals and fragrant rice

    Vietnamese - was always more into Thai food until I went to Vietnam, and now I love it. I have 3 banh-mi joints right near my house, and I eat my bodyweight in tofu rice paper rolls every week

    southeast asian. vietnamese, thai especially but also cambodian and laotian food which i discovered later and it's amazing. ditto malaysian and indonesian, such a wild mix of flavours and influences. chinese is probably my least favourite asian cuisine with the exception of dim sum, which might just be my death row meal.

    japanese. tied with vietnamese and thai. you can't go wrong. whether it's sushi or yakitori or izakaya or kaiseki or any of the many types of japanese cuisine, i could basically eat it forever and not get bored.

    mexican food is amazing too, especially for the variety and freshness of ingredients and how it fuses so many cultures and influences.

    i'd say those are the cuisines that influence my cooking the most, as i definitely tend to lean asian for that. but i also adore italian, french, indian, korean, peruvian, middle eastern, california cuisine, southern american, austrian (it's like a more varied, refined version of german cuisine), etc.

    Mmm. Austrian food...Yum.

    And kind of on a tangent, anything that comes from Czech/Serb/Eastern European countries. It can be hearty, country fare, but sometimes you'll find it's a little more...refined, I guess. At least what I've experienced where I live...

    Ah yes, I can get behind all that. Definitely.

    We really don't have too many Vietnamese places around here, but I do have a fondness for bahn bao, especially in winter.

    I love a good bowl of pho...I didn't realize that the beef in beef pho is raw until they put it in the broth and that is how it cooks!!! I ordered some for delivery and it was nothing like the restaurant - the meat was in a separate container and RAW!!! I called the restaurant and explained to them that they forgot to cook my beef!!! The woman on the other end of the line giggled a bit then told me what to do. Lesson learned. I have given it a pass lately because of the high sodium content.

    Waterslide, just google Belgian cuisine and there are recipes and everything. I know you like to cook, so experiment a little and let me know how it turns out.

    And yes, the chocolates are glorious - even the ones from the supermarket.
