    From my waitressing days (20 years or so) in many different restaurants I would have to say to Twitchy and whomever else, "Get a life!". Maybe I just got lucky or have disgusting sanitary habits myself (I am almost OCD with cleanliness). So. You will find hair in your food from time to time (or you won't find it). When I cook I sometimes find a hair. I took a food handler's course for a license and was told that hair is not germy it is un-appetizing. Just gross to look at. You will find germs in your food. You will also find children's boogers under the table top or on the booth seat, other customer's loose hairs floating around the place. Hear a sneeze in the room? Spores are EVERYWHERE! Take a moment to relax on your worries. The human body is capable of fighting off so many germs! Before food even gets to a restaurant or store it is subject to many bacteria, viruses and germs. Don't freak out, you will not die from eating in restaurants or buying your food from the grocery store. There are many, many other bigger things to get your panties in a wad over.     I waitressed when I was a teenager, and I remember the kitchen was always spotless! There were stainless steel pulldowns that covered everything (kinda like piano covers). We were really anal about every aspect of the food. Things rarely got sent back with hair in it, because everyone wore head covers in the kitchen, and all the wait staff had to have their hair pulled back. Mind you, it was a pretty small restaurant in a pretty small town, so maybe that was the difference? We weren't exactly overworked, so we weren't rushing, food wasn't spilling or falling.

    The only problem with that is it gave me a false sense of security! I assumed that all restaurants were the same! Silly me.

    Has anyone else ever worked in "clean" restaurants?

    I wonder what kind of nasty ass restuarants people work in where food is being dropped and replated, dirty dishes are used, and the wait staff eats off customers' plates! What the hell.

    I am a dishwasher/prep cook and my kitchen is pretty clean, I think. Anything dropped on the floor is thrown out, or if it is a dish it is rewashed. If there is a hair or anything found in a meal, that one is thrown in the garbage by the server, and a new one comes from the kitchen. And the kitchen is always being cleaned. I would know, I'm the one cleaning.

    I've worked in two sandwich shops (franchises) and one indy cafe/bakery/soup & sandwich place. In all three, we kept things spotless, were forever washing our hands and/or wearing gloves, wore hats or hairnets, always threw out anything that fell on the floor, kept all surfaces and dishes cleaned and sanitized, etc. In fact, the two franchise joints were even more vigilant. Separate grill for sauteeing vegetarian toppings even.

    It helped a lot that the food was prepared essentially right in front of the customer, of course - ie. behind a counter - there's no room for error there. There are some nice restaurants with open kitchens as well, and I tend to frequent those. But I'm not anal about germs, nor do I expect to never see a hair or something in my food. It happens.

    Apparently the most dangerous and common means of contaminating food with all kinds of germs is lack of hand-washing the kitchens. Forget hair, dropped food, poor refridgeration, deliberate sabotage. If the kitchen staff don't wash their hands after they use the bathroom, especially if they have some kind of contageous disease or gastro, then everything they touch will be a potential source of food poisoning. Personally, provided the food tastes good and has no obvious mice droppings or nail clippings in it then that's OK with me. It's actually very UNhealthy to live in a totally sterile environment. The only way you will become resistant to germs is to be exposed to them.

    I don't even think about what could be in my food when I'm in restaurants now. It's better not to know. I always though those gross stories were urban legends but I worked in a hotel last year and would always see the head chef (and others) use the rancid, stinking toilet at the side of the hotel and then stride back into the kitchen without washing their hands. It was NASTY. This was a very classy five star hotel by the way where people paid 100 dollars + for a meal.

    My cooking show host pet peeve would have to be hands down, no pun intended, Racheal Ray. Like someone said before she washes her hands for like 2 or 3 seconds tops. The water I know doesnt even get warm and the soap she uses doesnt even suds up. I know there are way more important things in life to get peeved about but it just rubs me the wrong way when she is saying "I use a seperate cutting board for pork or poultry" but sucks big time at carrying on the "sanitary" message.
