    Default Cheese souffle

    Not a recipe, just pictures. I've never had a French one and have always wanted to try the perfect souffle.

    Marie? Folie? Tell us about the perfect one. What's the best kind of cheese? Is it a main dish usually? What other foods are served with it? Is red wine suggested?







    Here's a lesson by a French woman and she looks like she knows what she's doing. I love watching real cooks cook. They feel the food, unlike Martha Stewart who has no cooking style. She's way too rigid for me.

    Interesting that this woman never stops stirring the mixture.

    To be honest I can't remember the last time I had soufflé. I've never made it myself but from what I hear it's pretty hard to make as if you screw even a tiny bit as soon as you pull it out of the oven it will deflate.

    We had to make souffles in junior high as part of home ec classes. The recipe that works for me is part of the better homes and garden cook book that was my grandmothers. I'm not french- but prefer to use a blend of cheddar and havarti cheese. Honestly, you can use whatever you like or have on hand.

    I've become lazy, don't like making the bechamel sauce and now make cheese puff pastry rings instead of the souffle.

    I just made one the other day with my mom. We used danish blue cheese and a little bit of agave (or honey) on top, very tasty! I think the recipe was Tyler Florence's, but Julia Childs original recipe is the best in my opinion. Just be exact with the directions and don't open the oven while it's cooking!

    Blue Cheese Souffle with Fresh Figs and Honey Recipe : : Food Network

    we used agave on top because we didn't have figs on hand (fresh figs are super seasonal around here) but it sounds like it'd be awesome together.

    danish blue cheese is mildest, but I'm not sure how much of a difference it'd really make.

    Thanks- I'll have to try making that one we have smoked apple cheddar in the fridge.
