    I know Vegan is tough. I'm looking for, and willing to share my boring recipies as well.

    i'm not vegetarian but i do eat a lot of veggie food.

    an easy dish is lentils (canned or the pre-cooked ones that come in a vacuum sealed package) with fake sausage. heat up some olive oil in a pot or a deep pan, add a chopped onion, cook til it's gone a bit transparent/golden, add the chopped 'sausage', brown a little, then add a tin of chopped pelati tomatoes, not tomato paste (a small one, basically about a cup of the stuff), then add the lentils.

    another easy dish is a simili-ratatouille (real ratatouille takes forever).
    slice some mushrooms (fresh, the tinned ones are slimy), eggplant, zucchini, red/green/yellow pepper, basically any veg you want.
    heat up olive oil, add chopped onion, a bit of garlic, add eggplant (takes the longest to cook of all the veg i listed), peppers, zucchini, mushooms, basically kind of roast them in the pan, then add a tin of pelati tomatoes and let it simmer. season with herbes provenšales or oregano or whatever you have lying around, salt and pepper.
    i serve this over chick peas but you can substitute rice, pasta, etc...

    I usually buy a big bag of dried beans, usually black eyed peas. You soak them in water for 6 hours (overnite it's not hard), and cook for 1 hour.

    Then I sit them in apple cider vinegar for a few hours, to soak up the taste.

    Saute sliced zucchini, as much as you can stand, plus red onions and red-green-yellow peppers. Add in a little olive oil, plus lemon juice...lots of it and sliced fresh garlic. Add salt and pepper to taste. Let sit.

    The veggies soak up the lemon juice and the beans soak up the vinegar. When you add them together; it's really good.

    The biggest problem with a vegan diet is getting enough protein. Most vegetarians eat diary and eggs which solves that problem. Pulses (lentils, beans, etc) provide some protein and also things like tofu and TVP (textured vegetable protein) or a fantastic UK product called Quorn which is a mushroom-based thing that can be shaped into 'burgers' or 'pasta sauce' etc.

    i love quorn. i didn't know it was british, it's readily available here. at the supermarket, most vegetarian/vegan meat substitutes are either tofu or quorn.

    quinoa is great for protein.

    i have an awesome vegan cookbook called veganomicon that you should check out.

    i would love a relatively low fat, simple, vegan dessert recipe if anyone has one...

    Protein is not a problem unless the vegan is doing something stupid, like only potato chips and licorice.

    Aside from that, it's B12, it has to be supplemented, or obtained through fortified foods.
