Be a bit careful with dried and canned fruits - FULL of sugar cals/carbs.
Pumpkin seeds (pepitas) are fabbo in a salad, also lightly roasted pine nuts along with various bean sprouts.
Raw capsicum (red is sweetest) is good and I love olives, artichokes, sundried tomatoes.
Basically, there is almost nothing you can't put into a salad. Experiment!
